Italian Sausage and Pepper Skewers

  • Mayonnaise
  • Yellow Baby Potato(es)
  • Dijon Mustard
  • Green Onion(s)
  • Spice Mix (Dried Oregano,Paprika,Garlic Powder,)

1. Preheat 400°F. Cut the potatoes in 2 or 4 depending on the size. Place in a saucepan with enough water to cover. Bring to a boil and cook 8-10 minutes. Drain and rinse under cold water for 1 minute.

2. Cut the pepper into big cubes. Cut half the onion into cubes and chop the other half. Thinly slice the green onion. Cut the sausages into pieces.

3. Mix the pepper, the cubed onion and the sausages with 3/4 of the spices, a drizzle of oil, salt and pepper. Thread onto the skewers and place on a baking sheet lined with baking paper. Bake in the oven for 15-16 minutes. For the BBQ: Preheat the grill to medium-high heat. Oil the grill. Grill the sausages for about 10-15 minutes.

4. Mix the potatoes with the chopped red onion, green onion, Dijon mustard, 1 tbsp. mayonnaise, 1 tbsp of apple cider vinegar, salt and pepper. Add a drizzle of oil to taste.

5. Mix the rest of the mayonnaise with the rest of the spices. Let your children develop their cooking skills by inviting them to mix the ingredients together.

6. Serve the skewers with the mayonnaise and the potato salad. Bon appétit!
