
Nordic Shrimp Quiche
with leek, potato, thyme, yogurt and cheddar

- Nordic Shrimp
- Yellow Potato(es)
- Mild Cheddar
- Shallot
- Fresh egg
- Greek Yogourt 2%
- Leek(s)
- Garlic Clove(s)
- Fresh Parsley and Thyme
1. Preheat the oven to 350°F. Peel and cut the potatoes into small cubes. Place in a saucepan with enough water to cover. Add salt. Bring to a boil and cook 5-7 minutes until tender. Drain.
2. Chop the garlic, shallot and herbs seperately. Slice the leek in 2 horizontally then thinly slice into half rounds. Drain the shrimp.

Heat a drizzle of oil in a pan over medium heat. Cook the shallot, leek, garlic and herbs for 3-4 minutes. Add salt and pepper. Add the cooked potatoes and cook for 2 minutes.
4. Whisk the eggs with the yogurt and put in a lightly oiled baking dish with the vegetables and shrimp. Add salt and pepper. Top with the cheese. Bake in the oven for 30-38 minutes until the eggs are cooked in the center.
5. Serve the quiche. Bon appétit!
