Naan Chicken Sandwich

with yogurt and red curry sauce

  • Chicken Thighs
  • Naan Bread
  • Wooden Skewers
  • Lebanese Cucumber(s)
  • Lime
  • Fresh Mint
  • Red Onion(s)
  • Brown Sugar
  • Greek Yogourt 2%
  • Red Curry Paste
  • Curry Powder

1. Cut the chicken into pieces and place it in a bowl. Add the curry powder, half of the brown sugar and a drizzle of olive oil. Leave to marinate until it’s time to cook it.

2. Cut the lime in half. Slice the cucumbers and the red onion. Separate the mint leaves from the stems.

3. Put the chicken pieces on the wooden skewers.

4. In a pan, over medium-high heat, add the chicken skewers. Cook for 3-4 minutes on each side. Reduce the heat, cover and cook for another 1-2 minutes or until the chicken is cooked.

5. In a bowl, the combine the yogurt, the curry paste, to taste (caution! spicy), the rest of the brown sugar and the juice of half a lime.

6. Heat up the naan bread, if desired. Top the naan bread with the sauce, the chicken skewers, the cucumbers, the onions and the mint leaves. Bon appétit!
