
Italian Tomato Gnocchi Soup
easy 25 minutes
with spinach, roasted bell pepper, basil and cream

- Gnocchi O Sole Mio
- Diced Tomatoes
- Celery
- Yellow Onion(s)
- Carrot(s)
- Grilled Bell Pepper
- Vegetable Broth Cube(s)
- Cream 18%
- Spice Mix (onion powder,spice mix roasted garlic and peppers,lemon pepper)
- Baby Spinach
- Basil
Necessary elements

1. Cut the celery, carrot, onion and bell pepper into very small pieces. Mince the basil.
2. Heat a drizzle of oil and 1 tbsp. of butter in a large pot over medium-high heat. Cook the carrot, celery, onion, bell pepper and spices for 2-3 minutes. Add salt and pepper.
3. Add the canned tomatoes, a pinch of sugar, the broth cube, 2.5 2P | 3.5 3P cups of water and the gnocchi. Bring to a boil. Cover and cook for 7-9 minutes over low heat.
4. Add the cream and spinach and simmer for 1-2 minutes. Adjust the seasoning to taste.
5. Serve the soup and garnish with the basil. Bon appétit!
