
Italian Calabrese Salami Sandwich
easy 20 minutes
with garlic mayonnaise, arugula and marinated eggplants

- Mayonnaise
- Arugula
- Calabrese Salami
- Garlic Clove(s)
- Marinated Eggplant
- Provolone
- Honey
- Spice Mix (chili powder,chili flakes,smoked paprika)

Baking sheet, bowls.
1. Preheat the oven to 400°F. Chop the garlic. Cut the loaves in half, lengthwise.
2. In a bowl, combine the garlic with the mayonnaise. In another bowl, place the honey and heat it up for 10 seconds in the microwave. Add the spice mix, to taste and mix well.
3. Spread the garlic mayonnaise on the bottom halves of the loaves. Add the salami and the provolone slices. Cook in the oven for 5-6 minutes.
4. Garnish the sandiwch with the arugula, the marinated eggplants and the spicy honey, to taste.
5. Serve the sandwiches. Bon appétit!
