
Creamy Pesto Chicken Penne
with bell pepper and zucchini

- Spice Mix (Dried Oregano,Garlic Powder,Chili Powder,)

1. Chop the garlic. Dice the bell pepper and the zucchini. On a separate board, cut the chicken into pieces.
2. Bring a pot of salted water to a boil. Once the water is boiling, add the pasta and cook for 8-10 minutes. Save about 1 cup of the pasta cooking water before draining. Drain and set aside.
3. In a pan over medium-high heat, add a drizzle of olive oil. Add the chicken and the spices and cook for 7-8 minutes or until the chicken is cooked. Remove and set aside.
4. In the same pan, add a drizzle of olive oil. Add the peppers, the zucchini and the garlic. Cook for 5-6 minutes. Add the cream, the pesto and a little of the pasta cooking water. Simmer for 2-3 minutes.
5. Add the pasta, the chicken and half of the grana padano. Mix well and season with salt and pepper.
6. Serve the pasta. Garnish with the rest of the grana padano. Bon appétit!
