Club Sandwich Chicken Salad

  • Chicken Breast
  • Romaine Lettuce Heart(s)
  • Tomato(es)
  • Simulated bacon bits
  • Cheddar cheese
  • Slices of Bread
  • Mayonnaise
  • Lemon
  • Shallot

1. Cut the tomato into cubes. Cut the bread and the cheddar into cubes. You can also grate the cheddar if you prefer. Chop the shallot. Thinly slice the lettuce. Cut the lemon in 2.

2. Heat a drizzle of oil in a pan or on a grill over medium-high heat. Season the chicken with salt and pepper. Add the chicken to the pan and cook 3-4 minutes on one side. Flip, cover and cook 7-9 minutes until center is cooked through.

3. Heat a drizzle of oil and 1 tbsp. of butter in a small skillet over medium-high heat. Cook the bread pieces for about 1 minute on each side or until browned.

4. In a bowl, mix the mayonnaise with the juice of half a lemon and the shallot to taste.

5. Slice the chicken. Top the lettuce with all the ingredients and the sauce. Bon appétit!
