Kenny is an avid forager, and BC’s wilderness inspires his craft. Spending time in the forest gives him an extra layer of appreciation for the flavours nature gives us.
This Earth Month, follow chef and recipe developer Kenny into the forest to see how time spent foraging inspires the meals we cook.
“Foraging for mushrooms teaches you respect for food,” Kenny says. “You see the seasonality firsthand. It makes you want to use every ingredient thoughtfully.”
Cooking with Nature: Wild Mushroom and Truffle Risotto
Kenny’s experience on the forest flood led to the creation of our Wild Mushroom & Truffle Risotto meal kit.
Local oyster, chanterelle, and shiitake mushrooms bring deep, earthy layers to the decadent, creamy risotto. It’s further richened with sauteed leek and truffle oil.
Bring the rich, comforting flavours of the forest to your table this week.

Kenny’s Tip: The Perfect Sear
For juicy, golden mushrooms, cook on high heat and wait to add salt until the very end. Salting too early draws out moisture and prevents that perfect caramelization.
Honouring the Earth
Nature is full of rich flavours and nutrients that nourish us. It’s important we honour it and do our part to look after the Earth, so we can continue to enjoy everything it has to offer.
