Nuba is a modern Lebanese restaurant founded nearly 20 years ago by Victor Bouzide, now with 4 locations across Vancouver. Inspired by his grandmother’s cooking, he opened a small 15-seat restaurant on Hastings Street, where he served his now-famous plates and pita wraps.

Why did you want to partner with Fresh Prep?
When we were approached by Fresh Prep to collaborate, it was a no-brainer. Their approach to the concept aligned perfectly with how we do things at Nuba. Choosing like-minded brands aligned with our values is paramount for us to strike up meaningful partnerships. And Fresh Prep is not just about creating incredible and accessible meals, they also focus on the health of the planet and their impact on that, much like the Nuba brand!
Tell us about the Chicken Shish Tawook recipe. How did you ensure that the essence of Nuba’s flavours were captured in the meal kit?
This recipe is a traditional Middle Eastern marinated chicken dish that’s incredibly popular in Lebanon. It’s been amazing to see it become, and remain such a staple and customer favourite on our menu over the years. There are different elements to this recipe, from the garlic toum sauce, Nuba hummus, almond rice, and so on. It promises a nutritious meal you’ll enjoy cooking with your loved ones.
*Chef’s tip: marinate the chicken in the fridge for 24 hours prior to cooking to make it even more tender and juicy.
Can you describe the process behind making these kits user-friendly for home cooks?
Fresh Prep was amazing in ensuring this meal kit was user-friendly for everyone involved. The cooking times we’ve noted are precise. The chicken is diced perfectly to allow for the perfect marination as well as being the right size to go on the skewer. We’ve also included Nuba’s own hummus in this collaboration which you can enjoy on its own in the days after you’ve made this recipe. (Keep the empty containers and reuse them for sauces or food storage in the future!)
What do you hope customers will take away from this partnership and the meal kit experience?
Our aim with this partnership is for people to just be able to come together, break bread, and enjoy the experience of having cooked this recipe together. In terms of a lasting effect, we would love it if this recipe showed people how simple it can be to create a delicious and nutritious meal from the comfort of your own kitchen.
