
Whipped Feta, Bacon and Pear Flatbread
with arugula, honey and pickled shallot

1. Preheat the oven to 425°F. Put the bacon slices in a pan over medium high heat. Cook 3-4 minutes on each side or until desired doneness. Transfer the bacon onto a paper towel.
2. On a work surface, add the flour and roll the pizza dough to make small pizzas or a large one. Transfer on a sheet pan with baking paper. Brush the dough with a bit of oil and bake in the oven for 12-15 minutes until colored.
3. Thinly slice the shallot. Cut the pear into thin half slices or into small cubes. Put the feta and cream in a food processor and pulse until it becomes a whipped feta.
4. Put the shallot in a bowl. Add 1/2 cup of water, ¼ cup of cider or wine vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the shallot and let marinate.
5. Heat a drizzle of oil in a skillet over medium high heat. Add the pears and honey and cook 2-4 minutes until lightly colored.
6. Mix the arugula with a drizzle of oil, salt and pepper. Let the dough cool 3-4 minutes before adding the feta. Top the pizza dough with the whipped feta cheese, pears, crumbled bacon, arugula and pickled shallot. Add pepper to taste. Bon appétit!
