
Piri Piri Pulled Tofu Burger
with sweet potato fries and a jalapeño, cilantro and coleslaw
Ingredients
- Brioche Burger Buns
- Tofu
- Sliced red cabbage
- Carrot(s)
- Jalapeño(s)
- Maple Syrup
- Sweet Potato(es)
- Vegan Mayonnaise
- Piri Piri Sauce
- Cilantro
1. Preheat the oven to 425°F. Cut the sweet potatoes into quarters and place them on a baking sheet lined with baking paper. Add a drizzle of oil and salt. Bake in the oven for 24-26 minutes.
2. Grate the carrot. Chop the cilantro and jalapenos. Grate the tofu.
3. Mix the cabbage with the carrot, cilantro, jalapeño, maple syrup, a drizzle of oil, 1-2 tbsp. of cider or wine vinegar, salt and pepper.
4. Heat a drizzle of oil in a pan over medium-high heat. Cook the tofu 3-4 minutes. Add salt and pepper. Add 1/4 of the Piri Piri sauce and cook 2-3 minutes. Drain the tofu to remove the excess oil then toss the tofu with the rest of the sauce.
5. Heat the buns to taste. Garnish with the tofu and coleslaw. Serve the burger with the fries and mayonnaise. Bon appétit!
