
Mediterranean Artichoke Pizza
with tomato, arugula, lemon, oregano and feta

1. Preheat the oven to 400°F. Cut the tomato into small cubes. Drain and rinse the artichokes then cut them into quarters. Zest the lemon. Chop the garlic and the oregano. Thinly slice the onion.
2. Put the artichokes in a bowl with the garlic, the chili flakes (to taste), half of the oregano, the lemon zest, the juice of a quarter of a lemon, a drizzle of oil, some salt and some pepper. Let marinate for 3-5 minutes.
3. Place the naan breads on a baking sheet lined with baking paper. Garnish with the onion, the tomatoes, the artichokes, salt, pepper and a drizzle of oil. Bake in the oven for 8-12 minutes or until browned. Save the bowl that marinated the artichokes for step 4.
4. Put the arugula in the bowl and mix with the remaining oregano, the juice of a quarter of a lemon and a drizzle of oil. Add salt and pepper to taste.
5. Cut the naan breads into slices and garnish with the arugula and the crumbled feta. Bon appétit!
