
Greek Style Pork Loin
with cherry tomatoes, green beans and oregano tzatziki

1. Preheat oven to 425°F. Chop the garlic Pick and chop oregano leaves. Cut the pepper into 3/4 inch strips. Trim both ends of the beans. Cut the potatoes into 1 inch pieces.
2. Put the potatoes, half of the garlic, the peppers and the green beans on a lined sheet pan. Drizzle with oil, and season with half of the oregano, salt and pepper. Bake in the oven for 10-12 minutes. Take the sheet pan out of the oven. Place the pork and the beans on the baking sheet. Add the souvlaki spices and seasoned with a drizzle of oil, salt and pepper** to the baking sheet and cook for another 12-15 minutes or until the pork reach an internal temperature of 160F.
3. Grate the cucumber. Mix the yogurt with the cucumber, the garlic to taste, the rest of oregano, a drizzle of oil and pepper.
4. Serve the pork with the grilled vegetables, the cherry tomatoes and garnish with the tzatziki. Bon appétit!
