Gnocchi with Sun-Dried Tomato Pesto

1. Take advantage of this simple recipe to include your kids in the preparation. Younger ones could tear up the cheese as the older ones could slice the veggies.

2. Preheat oven to 425°F. Thinly slice the zucchini and the red onion. Tear up the cheese into pieces.

3. Mix the gnocchi with the vegetables, pesto, a drizzle of oil, salt and pepper. Put on a lined sheet pan. Cook in the oven for 18-20 minutes.

4. Remove the pan from the oven. Add the pieces of cheese. Bake in the oven for another 4-5 minutes.

5. Serve the gnocchi and garnish with the oregano and a drizzle of oil. Bon appétit!
