
Crispy Tofu Burger
with cheddar, lettuce, pickle and spiced fries

- Tofu
- Brioche Burger Buns
- Panko Breadcrumbs
- Boston Lettuce
- Dill Pickles
- Mayonnaise
- Yellow Potato(es)
- Slice cheddar
- Spice Mix (dried parsley,onion powder,chili flakes)

1. Preheat the oven to 425°F. Cut the potatoes into large fries. In a bowl mix the fries with the spices, salt, pepper and a light drizzle of oil. Place on a baking sheet lined with baking paper and bake in the oven for 26-30 minutes.
2. Thinly slice the pickle and cut the tofu into 2 2P | 3 3P squares the size and thickness of a burger patty. Separate the lettuce leaves.
3. Put 2 2P | 3 3P tbsp of mayonnaise in a bowl with 1 tbsp. of water, salt and pepper. Mix. Put the panko in another bowl. Cover the tofu with mayo then coat with panko.
4. Add a generous drizzle of oil in a small pan with oil and heat over medium-high heat. Cook the tofu 2-3 minutes per side until browned. Add more oil if needed. Add the cheese slices on the tofu, turn off the heat and cover for about 1-2 minutes. Remove from the pan when the cheese is melted.
5. Heat the buns 2-3 minutes in the oven. Top with the mayonnaise, lettuce, tofu and pickle. Serve with the fries. Bon appétit!
