
Cod Pomodoro

in a tomato sauce with butter pearl couscous
Ingredients
- Cod Sirloin(s)
- Diced Tomatoes
- Basil
- Red Onion(s)
- Zucchini(s)
- Bruschetta Spices
- Pearl Couscous
- Garlic Clove(s)
- Vegetable Broth Cube(s)

1. Bring a pot of water to a boil. Cut the zucchini into small pieces. Chop the garlic and the onion.
2. Cook the couscous 8-10 minutes until tender. Drain and mix with oil or butter to taste, salt and pepper.
3. Heat a drizzle of oil and 1 tbsp of butter in a large pan. Cook the onion, garlic and zucchini for 3-4 minutes. Add salt and pepper.
4. Add the tomatoes, spices, 1 tsp of sugar, 0.5 2P | 1 3P broth cube and 1/2 2P | 3/4 3P cup of water. Mix. Add salt and pepper to taste. Add the cod, cover and cook 8-10 minutes over medium-low heat.
5. Serve the cod with the couscous and garnish with the basil. Bon appétit!
