Tomato and Bell Pepper Grilled Naan

  • Mozzarella

  • Lemon
  • Garlic Clove(s)
  • Grana Padano Cheese

1. Preheat the oven to 400°F. Optional step: Lightly oil up the naan breads and grill them on a ridged pan for about 2 minutes on each side or until browned. Place the naan breads on a baking sheet lined with baking paper. Top with the mozzarella and cook in the oven for 6-8 minutes or until the cheese is melted. For the BBQ: Preheat grill to medium-high heat. Oil the grill. Make the recipe as indicated but on the grill.

2. Cut the tomato into small pieces. Cut the bell pepper into thin strips. Chop the herbs and the garlic.

3. Warm up a drizzle of oil in a small pan over medium-high heat. Cook the garlic for 1 minute or until browned. Remove from the pan.

4. In a bowl, mix the tomato with the bell pepper, the roasted garlic, the herbs, a drizzle of oil, salt and pepper. In another bowl, mix the arugula with the parmesan, the lemon juice (to taste) and pepper.

5. Top the naan breads with the tomato salad and the arugula. Bon appétit!
